Let’s spoil our lovely moms!

I don’t know about you, but right now I’m being bombarded with ads for finding the ‘perfect Mother’s Day gift’, and it’s made me wonder what really is the ‘perfect’ gift for mom.

In the shops, we’re told kitchen appliances, cleaning products and jewelery should be our go-to purchases. But as a mom of two, I can tell you all I really want is a little sleep in, brekkie in bed and to spend time with my loved ones for the day. For me, sharing my joy for cooking and nutrition is a great way to show my family and friends I love them, and even cooking together and sharing knowledge is a fantastic way to socialize and bond. Here are some delicious Mother’s Day recipes to cook, eat and share with loved ones, or even have dads and kids whip them up for you!

1. Breakfast Panna Cotta with Chocolate Crunch

Master brekkie in bed with this Panna Cotta! Made with coconut yogurt and almond milk, this breakfast dish is dairy-free and can be easily prepped the night before for a lazy Sunday morning feast. Pop the mixture into a ramekin, glass or recycled jar and deliver this to mom with her fave cup of coffee or tea!

This is also a great totable breakfast on your way to work or pop them into little lunchboxes.

2. Beet Red Velvet Mud Cake

I can’t think of a better celebratory dish than cake! It’s delicious at any time of the day – morning or afternoon tea, a snack or even as a dessert – plus, this one has a hit of veg. Beet is packed with essential nutrients such as fiber, vitamin B9, potassium, iron, and vitamin C. I’ve iced this beauty with a tasty ricotta frosting, which is high in protein and calcium so you can indulge guilt-free!

3. Mother’s Day Cupcake Bouquet With Cream Cheese Frosting

Back by popular demand is my Mother’s Day Cupcake Bouquet! Edible gifts are my favourite so I popped this recipe on the website for Mother’s Day last year and received lots of positive feedback about how much fun you had putting your bouquets together with your families.

I normally use gluten-free vanilla cupcakes, which are filled with millet, buckwheat and arrowroot, eggs, coconut milk and pure maple syrup, but you can use any cupcake or muffin from my website or my book!
