Lime and Coconut Bliss Balls

Did you know coconut is full of fiber, iron and potassium to support healthy muscle formation? It’s also a great source of satiating good fats. Pair that with some protein-packed cashew butter and zesty lime and these balls are the perfect foodie match as an afternoon snack or even as dessert!

Ingredients

Method


2 cups shredded coconut
¼ cup cashew nut butter
¼ cup almond meal
1 tbsp coconut oil
2 tbsp raw honey
1-2 tbsp fresh lime juice
Desiccated coconut, to roll balls in
1. Place all ingredients into a food processor and process until well combined.
2. Roll into little balls and in extra desiccated coconut.
3. Refrigerate for an hour before serving.

Tip:
Serve immediately, store in the fridge for up to 2 weeks or in the freezer for up to 4 months.
