Miso BBQ Salmon

Salmon may seem a bit too fancy to serve to your little ones, but this is a dish not only the whole family can enjoy, but it’s packed with amazing health benefits too. Salmon is full to brim with good omega-3 fatty acids to boost mood and aid in behavioural problems, it’s a fantastic source of protein to build strong bones and muscles, plus salmon is an excellent source of vitamin B for energy production and brain health! Phew, that’s a lot of good stuff! Enjoy this dish as is, or mash the salmon for younger ones. Dig in.

Ingredients

Method


¼ cup shiro miso paste
2 tbs rice vinegar
2 tbs tamari
2 tbs mirin
1 tbs sesame oil
2 tsp minced ginger
2 spring onions, finely sliced
4 salmon fillets, skinless
1. To make the marinade combine miso paste, vinegar, tamari, mirin and ginger in a large bowl.
2. Place salmon in a deep dish and cover with marinade. Let sit covered in the fridge for at least 1 hour or overnight.
3. Heat a barbecue grill or a chargrill on medium.
4. Drain salmon and grill for 3 mins each side. Allow to rest for 5 mins before serving.
5. Serve with spring onions on top.

Tip:
Serve immediately, store in an airtight container in the fridge for up to 3 days or freeze for up to 4 months.
